Anne Bonny’s Rhum Cakes are the next generation of Caymanian cuisine built on our rich culinary history. For generations Caymanians have enjoyed baking traditional Caribbean heavy cakes. “Heavy cakes” is the native name for cakes made from root vegetables such as cassava, potatoes or yams. Such cakes contained specialty ingredients like coconut milk, cane sugar and a blend of island spices. Baked in cast iron pots over a bed of red hot coals made from local kindling, heavy cakes were slowly baked to perfection in a "caboose" (a large, open box made of Builders’ wood, filled three quarters full with beach sand).
Caymanian baking has kept pace with the times, while respecting and celebrating our heritage. Our Anne Bonny’s Rhum Cakes have a light, fluffy texture and their moist, "rhummy" flavor is a slice of modern Cayman.
THE LEGEND OF ANNE BONNY
Anne Bonny was a feisty Irish-American pirate who captained her ship, plundered the waters of
the Caribbean and baked her unique rhum cakes in a caboose in the Cayman Islands long ago.
While today we use commercial-grade ovens instead of the caboose and have updated the
recipe based on generations of taste-testers, the secret ingredient of a commitment to
excellence has remained a constant.
